Fluffy Buttermilk Pancakes

My kids LOVE pancakes, but really what kid doesn’t? This recipe was created though because I wanted a pancake that I could love as well. I think my kids would be happy with any vehicle for syrup, one day I am tempted to just put cut up cardboard on their plates with syrup and see if they notice. I, however, need more than just a syrup sponge. I wanted a pancake that could stand up on its own. That just needed a touch of syrup and a little pad of butter and would still taste excellent. I also needed a pancake batter that would come together quickly, and that I could make with only a few sips of coffee in my system. I think I have met all of my goals with this recipe. I can get this batter ready in the time it takes for the griddle to heat up and it is super simple to put together. No sifting, or folding, or whipping needed; just a little measuring and a little stirring and you have beautiful, tasty, fluffy pancakes you would be happy to get at your favorite little diner.

I start by popping some butter into the microwave to melt. While that is working I pour all of my dry ingredients into a medium bowl and give them a quick mix.DSC_0050

Then into a small bowl I use the same whisk and just mix up my wet ingredients. Don’t forget the butter in the microwave. I use eggs right from the fridge – it is early, I am tired, and the kids want breakfast.  You will notice in my title we are using buttermilk.  I pretty much always have buttermilk in my fridge, it makes these pancakes so delicious.  It also gives the baking soda something to react with to make that wonderful fluffy pancake you are looking for.DSC_0051

The wet ingredients gets poured into the dry ingredients.

And after about thirty seconds of stirring I am ready.  Don’t worry about the little lumps, don’t over stir!

See the little bubbles, oooohhh I am getting excited for airy pancakes!!  I use a half cup of batter for each pancake, but you can adjust based on how big or small you like your pancakes.  Right after you pour your batter onto the griddle or pan, you have the option of adding ingredients.  Bananas, strawberries, blueberries or, of course, chocolate chips.DSC_0070

You will quickly start to see bubbles, this is normal and does not indicate that you need to flip your pancakes.  DSC_0059

I love to watch the pancake after I flip it because you can watch it rise. I drink a few sips of coffee and just think about fluffy pancakes for a minute or two.  After not too long I have a big pile of pancakes to feed the insanity.

Fluffy Buttermilk Pancakes

Fluffy and Delicious pancakes that are ready in no time!


Ingredients

  • 2 Cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • ¼ Cup Sugar
  • ½ tsp Salt
  • 4 Tbsp Butter, Melted
  • 2 Cups Buttermilk
  • 2 Eggs
  • 2 tsp Vanilla

Directions

  1. In a medium bowl, whisk together flour, baking soda, baking powder, sugar and salt.
  2. In a smaller bowl, whisk together butter, buttermilk, eggs, and vanilla
  3. Pour liquid ingredients into dry ingredients whisk to combine.
  4. Put pan over a medium high heat or set griddle to 325° You can add a little butter to your pan to prevent sticking.
  5. Pour half cup fulls of batter onto griddle or pan and cook until edges start to dry and look like they are cooking. Flip pancake and cook for one to two minutes longer.
