Extra Blue Buffalo Chicken Dip

I am sharing this buffalo chicken dip for my fellow lovers of the combo of a spicy wing generously dipped in tangy blue cheese dressing. Now don’t get me wrong, I have had many tasty buffalo dips in my time that did not have this bluey goodness, but when I started to make the dip for myself I wanted to really up the blue cheese flavor. Also, if you have a slightly evil streak like me, this is a good way to trick people into trying blue cheese that swear they hate it. Now, when it comes to the hot sauce I really love Franks original red hot sauce. I have tried a couple of other varieties of buffalo sauce and the dip just never has right flavor. I guess if you are used to a different buffalo sauce give it a whirl, but I will be sticking to the Franks.I start out with softened cream cheese, I know that we all sometimes like to skip that time to let cream cheese or butter soften, but it will be impossible to mix this together with hard cream cheese. Into the cream cheese I put a couple cups of shredded chicken. We had chicken the other night and this was a great way to use the up the leftovers, but a rotisserie chicken works great for this as well.

I like to just take a few minutes and just smoosh the chicken into the cream cheese before I add some blue cheese dressing and blue cheese crumbles.

Next in goes buffalo sauce and some shredded cheese. I am using cheddar jack, but I’ve used Mexican blend, just cheddar, the mac and cheese blend, really any shredded cheese works.

And after about five minutes of work we have dip. A pie dish works perfectly for this dip, it is just the right size. Into the oven it goes for about twenty to thirty minutes.

Ingredients

  • 8oz Cream Cheese Softened
  • 2 Cups Shredded Chicken
  • 1 Cup Blue Cheese Crumbles
  • 1 Cup Blue Cheese Dressing
  • 1 Cup Franks Red Hot Buffalo Sauce
  • 2 Cups Shredded Cheddar Jack Cheese

Directions

    Preheat Oven to 350
  1. Mix together all ingredients
  2. Pour into pie dish
  3. Bake for 20 – 30 Minutes or until hot and bubbly
