If there is one quick easy way to take any chocolate cupcake and elevate it to supreme status, it has to be peanut butter frosting. This frosting is so simple and so quick that its almost a crime to make cupcakes and not use this frosting. I would say that chocolate peanut butter cupcakes are my most requested cupcakes. I like to use this recipe for cupcakes, but whatever your favorite chocolate cake recipe or mix is probably a perfect vehicle for this frosting. I have made this frosting with vanilla cupcakes that I filled with strawberry jam for a peanut butter and jelly cupcake, and while people liked them, they got non of the fanfare that chocolates ones did. This last time around I was out of piping bags so I just used a ziplock bag and cut a corner off to pipe little mounds of delicious frosting that I topped with a peanut butter cup, because the only thing better than a cupcake, is a cupcake with candy on top!This is a five ingredient recipe, butter, peanut butter, powdered sugar, milk and salt. I am betting you have all of these on hand, so no excuses to not kick up your cupcake! I start by blending together my peanut butter and butter, I like to use the kitchen aid for this, it just makes life easier.
To that I slowly add the powdered sugar. This step can get pretty messy, so I like to add it a cup at a time and get that incorporated before adding more. If I am making these for company I like to sift the powdered sugar, it just guarentees that no one will get a glob of sugar in their bite. But, to be honest, if I am just making these for the kids, then I just toss the sugar right in.
You should end up with a pretty thick mixture, that is probably not the consistency you want for your pretty cupcakes. I add a touch of salt and then add milk until it looks light and airy and yum!
The hardest part now is not eating the frosting with a spoon. The recipe I am sharing should make enough to liberarlly frost a dozen cupcakes. If I were going to do an eight or nine inch layer cake, I would probably double the recipe, but I tend to go overboard on frosting. Happy Kids.
Peanut Butter Cupcakes
Ingredients
- 1/2 Cup Butter
- 1 Cup Peanut Butter
- 3 Cups Powdered Sugar (sifted)
- 1/2 tsp Salt
- 1-4 Tbsp Milk
Directions
- Beat together butter and peanut butter until combined
- Add powdered sugar one cup at a time until well incorporated
- Add salt and milk, 1 Tbsp at a time mixing after each addition until the frosting is at the desired consistency
When we were kids my Aunt Emogene was the world’s best PA Dutch cook. My brother’s favorite birthday cake was always her PA Dutch chocolate cake with peanut butter frosting. It’s still his favorite ~ and he’s over 70 now!! This recipe looks like a winner, so is the picture at the end of your post!
